Kid Made Recipe: Lemon Icebox Cake

Love lemon? Even your littlest kitchen helpers can assist with this classic, lemony icebox cake. Easy layering and no baking required, but the results are dinner party fancy.

Lemon Icebox Cake

Serves 8-10 Prep Time: 10 minutes Freeze Time: 10 minutes Total time: 15 minutes

Ingredients:

  • 2 tsp sugar
  • zest of 1/2 lemon
  • 3 cups fresh whipped cream
  • 12 graham crackers
  • About ? cup lemon curd plus more for topping

Instructions:

  1. Line a 9x5 inch bread pan with parchment paper so there is overhang on the long sides.
  2. Fold the lemon zest and sugar into the whipped cream.
  3. Spread a thin layer of whipped cream in the bottom of the bread pan.
  4. Layer graham crackers over the cream.
  5. Spread another layer of whipped cream over the graham crackers, then drizzle with lemon curd.
  6. Add another layer of graham crackers, and repeat this process until you have 4 layers.
  7. Finish with whipped cream. Freeze for at least 2 hours.
  8. Take out of freezer about 15 minutes before serving.
  9. Slice and top with a drizzle of lemon curd.
